How are you guys liking this series? I really enjoyed learning from that book. I always forget how much science has such a big impact on baked goods!!! I always use a mix of regular sugar and brown sugar. Although now I need to try out muscovado sugar once I figure out where to buy it.

Recently my grandma passed away and I was asked to make some desserts for her funeral. She absolutely loved all my baked goods. I’m in the works of creating a video about my origin story. My grandma was a big part of my origin story. She was the one that taught me to bake. As you can see in the photo it says “Eileen’s Cowboy Coffee Cake Muffins” and the reason I made these was because this was the first thing that we made together. We would always make this together. I will never not associate that recipe with her. I’ve learned so much of my baking skills, probably so many I don’t even remember from her. Although the only thing that didn’t stick was using cup measurements 😂

Coffee fudge!!! Y’all these are SO GOOD! The coffee flavor really makes the chocolate blossom even more. It makes it richer and I just think coffee and chocolate are soulmates!!

Butter is so important!! It does so much more than make cookies taste good! It’s one of the most important ingredients in baking because it affects flavor, texture, spread, tenderness and even browning!

Temperature matters too!
Cold butter - flaky, defined layers
Room temp - helps create a light, tender texture
Melted butter - more spread & chewier texture

I’ve been in a little bit of a rut with baking. I haven’t really been experimenting lately. But also life has been a little crazy🫠

I bought a few baking mixes to try out and well Ghirardelli brownies…. If you haven’t had them please go and buy a box and try them. You know everyone says homemade is better than a box and I don’t disagree. But y’all these are so good. Like what are they putting in there to make them so good???!! My boyfriend wanted me to make these every single week after this lol. These were the brownies I grew up on and I haven’t had them since high school basically. And now I’m addicted again lol.
