Back with a limited availability menu this week - I am booked for a bunch of princess cakes, but I am taking next week off as a goodbye summer week. While I don't have any specific plans with my daughter, but I am sure there will be some pool time, and other fun involved.

I am still neglecting to take photos of the summer roll cake, but I served it to my family this past weekend and it got rave reviews. I have room for a few of those as well as some strawberry princess cakes and of course, FIKA! I'm bringing the cardamom creme brûlée mini pie back this week and I am so excited for it.

It's a rainy afternoon here, but it's also steaming hot. Honestly my least favorite weather....

But, gotta stay positive and rejoice in the summer berries! I'll have a repeat of the summer roll cake - which I forgot to take a picture of! But I ate practically all the scraps from the rolling and it was reaaaaaly good. With a mix of whipped cream and mascarpone cheese, it's got a little tang, but great berry flavor. In fact I am making one for my mom's birthday this weekend, I like it so much! (Spoiler alert, mom!)

Alright friends, I promised it and here it is, a Christmas in July menu! I know it's a billion degrees out, but aren't you just ACHING for some winter spices?!? I know I am.

Instead of a traditional Yule log cake, I am switching it out with a delicious creamy and almondy summer fruit roll cake - no photos yet, but I am going to make this a stunner for you all. But if you feel like a princess cake, I have you covered with a delicious strawberry one this week.

On the Fika side, I have slices of the pepparkakor cake that I like to make at the holidays as well as the crisp cookies themselves. This box is also featuring a new item that I am testing out, a chocolate mint biskvier - watch this space for photos. I'll also have one of my all time favorite holiday cookies, the vanilla trees! They are so flakey and the filling is just so delicious. And finally on the buns, I am bringing back the saffron almond for this weekend only!

Getting this menu in under the wire for the week and I am getting excited about what I have planned for next week (think a little xmas preview!).

As for this week, I've got a lovely little menu together for you to help you beat the heat! I've got the return of the biskvier - one of my favorites! As well as one of my favorite things to make, cream puffs! This week they are semla style with almond cream and whipped cream in cardamom crusted cream puff. People always ask me what my favorite thing to make is in pastry, and it'll always be a cream puff/eclair/anything with choux pastry, it's just magic.

I had a great week off(ish) for the 4th, and I am pretty glad that I didn't have to turn the oven on anymore than I already did, it was SUPER HOT. Like even the pool feels too warm, hot.

But I am back and this week is 'berry' full of lots of tasty treats! I have the perennial favorites of the Princess Cake and the Strawberry cake and a FIka box featuring three different berries! I've got sliced blueberry crumb cake, Strawberry lemon cookies, and raspberry mini tarts inside.

I am glad to be back baking again this week, so order today to secure your spot for Saturday!

Today is the day! Orders are now open for Smörgåstårta or sandwich cakes. It's essentially a giant decorated sandwich, with layers of bread and a layer of skagenrora (a dilly shrimp salad) and a layer of a smoked salmon egg salad. All this is topped with more seafood and seasonal veggies. It's a really special treat and I only make it once a year.

Hello out there! I am back from vacation and ready to get baking for you all! It's always so nice to be away on vacation, but it is also so great to come home and get back to routine.

It's almost midsummer and you know what that means - sandwich cakes are coming next week! But first, the sweets. This week I have my take on a classic Swedish jordgubbs tårta. It's a classic sponge cake with a strawberry filling and loaded with whipped cream. It's a perfect taste of early summer!

I'll also have classic princess cakes available as well as fika boxes with all the treats you need for a weekend at the pool, river, beach, or any other body of water you can get near to keep cool.
