It was a hard week in TX, Alhamdulillah by the grace of Allah my family is all OK. While we did lose power and water for some time we had plenty food and water stored, and were able to keep our home warm enough. Many families were not so lucky.

This experience gave just the tiniest taste of what some families face daily in war torn areas of the world. No food, no water, no power, but they still have mouths to feed. That’s why when I decided to create Better World Bites I wanted to donate some of the proceeds, to help those around the world who suffer daily. InshAllah we can all learn from this experience; our lives will likely return to “normal” in a short time, but for many around the world they don’t have the luxury of knowing when they may have clean water, power, or even a bite to eat.

I also am grateful for the blessings that came with this challenge, such as the extra family time we had this week, and the reminder to stay humble and be grateful, because everything that we have in this world we have by the grace of Allah, and at any moment it could be taken from us.

When I was a kid every Friday my mom would wake up early and start baking. She would bake all day, and then Saturday morning load up the van and take everything to the local farmers market. My siblings and I knew that Fridays we either had to help mom bake or stay out of her way 😅. On Saturday we often went with her and learned how to serve customers and make change (we are talking dollar bills and coins y’all, no credit cards back then at small vendor farmers markets!) 99% of the time everything sold, but if a pack of caramel rolls or a pie didn’t sell we were so excited because it meant we got to eat it. Now that I’m baking cookies people in my family get excited if they realize it’s for us and not an order😅

More often than not when I look up new recipes I end up modifying them in some manner, sometimes multiple times. I tweaked the lactation cookie recipe several times until I was able to find the perfect balance of sweetness, moisture, texture, and still make sure they were loaded with oats and flax seed. I made probably at least a half dozen variations before settling on this one (no one is complaining about all those cookies we ate though!😂)

Who here likes oatmeal raisin cookies? Raise your hand! 🙋🏽‍♀️when I was a kid it was my favorite because I didn’t like chocolate. Chocolate chip cookies are often the top choice for people, but a good oatmeal raisin just might give chocolate chip a run for its money.

I am mom, a speech therapist, and now a cookie baker too. As far back as I can remember I have helped my mom bake, or been guided by her on baking treats myself. Pies, brownies, breads, rolls, cookies, she can do it all. We grew up almost exclusively eating homemade desserts (and then become dessert snobs and realizing the ones from store just can’t compare). I am so grateful to have learned how to bake so I can also teach my daughter. I am no where near as good as my mom, nor have I made the variety of things she has made, but without her allowing me (and my siblings) to step into the kitchen from a young age I don’t know that I ever would have developed this skill. Now I hope to share some of those delicious homemade treats with you!
