What’s an open crumb and why do bakers chase it? (Its seriously a competition out there)

That airy, hole-filled interior you see in some loaves is called an open crumb. WOOP
It’s a sign of well-fermented dough, good shaping, and strong gluten development. 💪🏼

But here's the truth: open crumb isn’t everything. A soft, even crumb is just as delicious — especially for toast or sandwiches! 🥪 I personally prefer a softer-tighter crumb myself. So, that's what I bake! 😀 🙂
