Leven which is sourdough starter is particular to its geographical area. Every sourdough starter draws bacteria from the air and has a peculiarity certain taste and flavor profile. So, while all Leven is the same thing (flour and water) and does the same thing as yeast working through dough, each sourdough starter is also slightly distinctive.

The best example is San Francisco sourdough. You can’t make San Francisco sourdough anywhere other than in the city of San Francisco. Why? Because the flavor profile of the bacteria in San Francisco’s air is distinctive. Some say it’s because of the large amount of the particular strain of bacteria in the air that isn’t as present in other parts of the country or world. Others give credit to the frequent fog, which provides a bacteria rich environment for yeast to live in the air. In any case, San Francisco sourdough is unique and has become internationally acclaimed.
