In 2001, Colette discovered she had developed a sensitivity to 150 foods. She resorted to eating very little and losing a lot of weight. Over time, most of Colette's food sensitivities went away, except those of wheat and dairy. After experimenting for many years with various healthy and many organic ingredients, Colette and her husband found a way to make the foods they loved taste incredible wit

hout using gluten, dairy or nuts. Being foodies at heart, they set out to make the best pizza, bread and pancakes using the finest ingredients possible and testing their creations on their family and friends. Did you know today is National Strawberry Shortcake Day? 🍓

We almost let the day slip by before realizing it.

Of course, once we found out, there was only one thing to do.

We baked a batch of tender biscuit-style shortcakes, let fresh strawberries sit until they became sweet and juicy, and topped everything with fluffy coconut whipped cream.

The kitchen smelled amazing, and the finished dessert disappeared faster than we'd like to admit.
