This hot fudge sauce can be made with either milk or dark chocolate. I like to do a combination of both. The secret to a successful big bake day? Bake in the right order.

I’ve learned through experience that the cookies that take the longest to set up should be baked first.

For me, that’s my cookies topped with Belgian chocolate. Good-quality chocolate can take hours to properly set before it’s ready to package—and the warmer your house is, the longer it takes.

In cooler weather, I’ll set up tables in a cooler room or even a screened-in porch to help the toppings set faster. In summer, I turn down the A/C and start baking extra early.

While trays are in the oven, I’m not sitting around waiting. I’m portioning dough onto trays, filling cookies, and decorating the ones that have cooled enough to handle.

By the time I turn off the oven, my cookies are ready to start packaging.

Efficient baking isn’t about working faster. It’s about having a plan that keeps you moving.

Softer cookie dough? Give it a little time. šŸŖ

Letting a softer dough rest for about 10–15 minutes allows the dry ingredients to absorb some of the moisture, making it easier to portion.

Still too soft? Don’t leave it sitting in a bowl—that can make portioning harder on your wrists. Instead, spread the dough flat on parchment or a silicone mat, cover it, and chill it. Once it’s firm, you can portion it easily with a bench scraper.

A simple little change that can make baking much easier on you!
