I’ll probably never ever offer a matcha latte, but I will offer you this yuzu and matcha tart. Delightfully tart and tangy yuzu cream is balanced with buttery almond shortbread, orange scented almond sesame cake, and three different matcha components. Soft cloud like matcha marshmallow, crispy dried matcha meringue, and soft creamy matcha meringue. It sounds like a lot, but it is just the right amount of everything.

A lot of new items hit our menu this week including this one I call Bèsame. It’s inspired by one of the few cakes I remember my mother making when I was a child. It was a simple Midwest style cake baked in a Pyrex 9x13 style pan that may or may not have been homemade, but was topped with brown sugar and cinnamon before being drizzled with defrosted frozen concentrated orange juice. We make this version a little differently. Orange scented olive oil cake is swirled with buttery crumble, dark brown sugar, and cinnamon. The cake gets a splash of fresh squeezed orange juice as it comes out of the oven. After cooling it is glazed with orange again, topped with tangerine mousse and soft vanilla chantilly. Candied orange zest, and some crunchy bits bring it all together.

Today’s the day to eat a galettes des rois, but we’ll also be making them on the weekends in January.

Sail Away- mango mousse, lime scented coconut macaron cake, passion fruit cream, coconut frangipane cake studded with roasted pineapple. Gluten free.

Chef’s Buche- pecan studded chocolate brownie cake, candied chestnuts, chestnut mousse, roasted almond dacquoise cake, cappuccino mousse.

Cookies for Santa- cocoa sponge cake, milk chocolate cream, crunchy chocolate chip cookie pieces, vanilla milk mousse, brownie cake.

Eleven years ago today we opened, about six months later than planned. Opening a few days before Thanksgiving has never really allowed me time to celebrate or even time to reflect. I’ll spare you my babbling reflections and share some stories instead.
The original sketch I made for lucettegrace probably on the back of scrap paper. Prior to opening I worked to create a lot of signature items, some are still on the menu, others aren’t. This is the lucettegrace cookie, I think it is excellent, but always was overlooked next to our brown butter chocolate chunk cookie. The original plan for flooring was grey porcelain in a herringbone pattern. Our old space is far from level and between rising costs and advice from our contractor we scrapped the porcelain tile. Forty sheets of plywood later my father in law and I cut and stained the floor boards. My wife is pretty amazing and in the early days when sixteen hour days were the norm she would bring my girls to the shop and we’d make dinner. Note not a single grey hair in my beard in year one. The display case on day one. After dinner my girls would pick out a treat. Now my beard is more grey than not, the menu has changed more times than I can count, and I’m still pretty excited each time I unlock the doors and turn on the ovens. Thank you Raleigh for all of your support over the years!
