I still cannot believe this is real!

I am so exhausted and sleep deprived, but this is literally over 20 years of being a pastry chef and all the hard work is being finally validated. Right now, I am sitting in first place going into competition for the top pastry chef in the world! Now I just have to maintain it tomorrow........ And these chefs I'm up against are the 6 best chefs in the World as well, including one who currently holds the 2025 world title.

I can and will do hard things 💜👑💜

THE RESULTS ARE IN FOR THE MAIN DESSERT CATEGORY TO SEE WHO GOES ONTO SUNDAY FOR THE WORLD TITLE!

WE TOOK HOME FIRST PLACE- LET'S FREAKING GO!

The dish we made was a fried cinnamon apple mule ear pie with an apple c***r moonshine glaze. Alongside the pie, we made a "cracker jack" inspired brown butter bourbon popcorn ice cream with maple bacon pecan toffee and a smoked bourbon dolce de leche.

The ingredients-

Moon Drops Distillery bourbon, corn wh***ey moonshine, and apple pie moonshine.

Hainlen Orchard Apple c***r and apples

Ervin Township Meats Bacon and Lard

Popcorn Cafe hulless popcorn we used as the base for our brown butter ice cream

Tomorrow we have biscuits and jampanionship and the stars and stripes showdown.

Sunday we throw down for the world title- huzzah!

REPORTING FROM THE CULINARY COMBINE! 👨‍🍳⏱️

Riley just decided to throw down and competed in the culinary combine competition!

The Culinary Combine at the 2026 World Food Championships challenges participants across 10 stages that test your culinary skill, precision, and speed- think a culinary obstacle course! Here is what he had to do-

🔪 Spatchcock a chicken
🥑 Master avocado fabrication
🍳 Make a perfect French omelette
🥩 Trim/clean spare ribs like a pro
🧅 Peel and dice an onion
🟠 Peel and segment orange suprems
🍅 Peel, remove seeds,& dice a tomato
🥬 Clean and prepare a artichoke
🐟 Fillet and debone whole salmon
🫑 Core,slice,& dice a bell pepper

Riley currently has the fastest time 3 of the 10 challenges and is in 3rd place!

I cannot say what I'm making, but I CAN give a massive shout out to my INGREDIENT SPONSORS!

Keeping it local goes more than saying the words. I wanted to use this opportunity to showcase not only what I do, but the amazing small businesses that give me the ability to have amazing ingredients to work with. Just like an artist, I cannot paint an amazing piece if I don't have paint!

From an over 100 year old orchard, to a buisness who had connections to other businesses in Indiana Grown and helped me make phones calls and resources- these people are the backbone to what makes my dishes just so incredibly special 💜 AND EVERYTHING IS FROM INDIANA AND A SMALL BUSINESS- HUZZAH!

Huge shout-out to Moon Drops Distillery for having these made for our team 💜 Xander (my oldest squire) is the one who drew my logo at the very start of Baked Knightly, so to see his art on a shirt is just so very special to me 💜👑💜

IT'S TIME...... Trading the Ren faire garb for the chefs jacket this morning cause it's go time!

No matter what happens this week, I've already won 💜 To enter kitchen arena with your squire who is in his final year of highschool is surreal. I thought he would one day outgrow wanting to hang out with his mom in the kitchen, instead we are competing for a world title- together 💜👑💜

For my other two squires, this time of year was the "growing pains" of their final marching band season. For Riley, I am so excited to see where this experience takes him. Yes, there hasU been tears shed with those feelings, but I am just so darn proud of where all three of my little guys are and now they are becoming amazing young men.

I also made the decision to offer an invite to the culinary student who I had from Jamaica to be a part of . So, this means my team is literally the future of the culinary industry and I am getting to show these kids what can come from running on pure grit.

I've cooked all over the world, and now it's time for me to show up in Indy and show everyone that just because I live in the middle of cornfields and nowhere doesn't mean I'm not a badass chef. I am just on a different quest of what being a chef means to me- the Queens mission is clear! To give thy people back their bread! Huzzah!

Be honest, be humble, and always be the hardest worker in the room- I can and will do hard things 👑

Got to love when the ENTIRE family NEEDS to be a part of tasting your dishes for final touches 🐈‍⬛

Princess Brie has incredibly sophisticated tastes, so I guess if she deemed my biscuits and jampanionship dish worthy of her approval- it MUST be a winning dish 🤣

(Note- I called the family to the table to sample the dish and she came and sat on the open chair since one of the squires were at work. She proceeded to wait for HER plate and when it did not come- she made sure to let us know she was unhappy and then patiently waited till I have her a nibble to try...... Cats, they sure are their own special thing 😜 Also, the animals are not allowed at the table, so hence why this was just funny to watch go down)
