HELP! (Non bakery related, this is just a parent post)

Squires car has been taken to the scrap yard, and now we are in desperate need of a cheap way for him to get back and forth from work/college.

As a mom, I cannot go over $2000 to help him, and he doesn't have the budget since we just put a ton of money into fixing his car unfortunately.

If anyone has a hook up or knows someone selling a truck or vehicle- please let us know! (We cannot do a loan, the entire budget I had set aside for the bread shed is now going to help him.)

It's time for some BREAD-ucation- "You say you have grow your own herbs/spices for your products. How can you say that when it's winter and do not have access to being able to grow outside?" Let's talk about that!

I live by the theory that nothing goes to waste on the homestead. Usually when I do a full basil harvest I bundle it and hang it to dry, but when I am constantly topping plants through the season it is much easier to dehydrate those tender tops instead.

If you have only ever had store bought dried basil, you truly do not know what you are missing. Home dried basil keeps so much more flavor, aroma, and color. The smell alone when you open the dehydrator is enough to make you hungry.

For basil, I try to keep the temperature low to preserve the oils and flavor. I dehydrate mine around 95Β°F to 105Β°F. Usually it takes anywhere from 6 to 12 hours depending on humidity and leaf size. You want the leaves completely dry and crisp, not leathery. If they still bend, they need more time.

One thing I have learned is not to overcrowd the trays. Good airflow makes all the difference and helps the basil dry evenly while holding that deep green color.

After they are fully dehydrated, I slightly crush the basil by hand instead of grinding it into powder. That helps keep more flavor locked in. Then it goes straight into a vacuum sealed mason jar for long term storage.

There is something satisfying about opening a jar of your own basil in the middle of winter and getting hit with the smell of summer all over again.

Sometimes I get some REALLY wild ideas that I just cannot shake...... This is one of those times πŸ˜‰ Back at Easter, I told the story of the legendary Pretzel salad. The problem was that it requires refrigeration and will melt if it gets warm.

So, the past couple weeks, I've been trying to figure out a way to make a "dust" that tasted like the filling for a strawberry salad, but would not melt if it was warm outside- And by golly, I finally got it!

Hand crafted crunchy pretzel (just like the crust), REAL strawberries grown right in my patch, and the PERFECT balance of salty, sweet and just a zing of candied lemon πŸ“πŸ‹πŸ°πŸ“ These are absolutely one of my FAVORITE things I've ever made, and they can go ANYWHERE without the need to be kept cold πŸ’œπŸ‘‘πŸ’œ

What.A.Day!

Over 25,000 steps, Blackhawk helicopters, supporting our community by stopping by the Western Panther Band and Guard booth at the Indy 500, and spending the most epic day with my son........ Oh, and being recognized as one outstanding chef πŸ˜‰

I am still trying to process everything that has occurred, I am still pretty much in shock......... I can and will do hard things..,.... Now to finally get some sleep 😴

FINALLY I can talk about this since the secret is out!

The was today and I had the most absolutely special day today πŸ’œ Our squires freshman year, the bearded Viking husband and I got to es**rt the Northwestern High School TIGER PRIDE Band in the Indy 500 Festival parade- today, we boarded the bus for our now SENIORS final moments with being a part of the band 😭

When I was asked to make pretzels and be featured for the Indy 500, I asked if I could es**rt the band this year since Northwestern was picked to be in the parade. I did not tell Jeremy Snyder or any of the staff, I just played along like I was a normal band parent. Yes, I gave up being in the parade with the Lucas Oil/Colts since to me walking the band one last time as a band mom ment more to me then anything.......

Baked Knightly was a 2025/2026 platinum sponsor this year for my son's very last year in the Tiger band, and it really was incredibly special to get the honor to walk the kids this one last time with my son. Our first year with the 500 festival, Giles was a freshman and we walked the band down that parade route- today, he was a senior! From feeding Indy car drivers, the Lucas oil family, and parade volunteers my pretzels, to handing the band their parade patches and boarding that bus with them having no idea "Giles mom and Dad" were the ones responsible for the band- this day was literally "racing through history" for this mom πŸ’œπŸ‘‘πŸ’œ

Now I'm off to have a good cry and remember that no matter how old my boys get- They will ALWAYS be here to raid my refrigerator 😭🀣 To the Northwestern School Corporation - THANK YOU FOR THE MUSIC, AND GIVING IT TO ME 🎢

If you're a race fan, you know in Indianapolis today is !

Well, here in thy Howard County realm, we wanted to do Carb Day our way! So, we baked 30 loaves of country white for thy Family Service Association of Howard Co. Inc since they put out a need for bread for the domestic violence shelter.

THIS is what it's all about folks! Even on weeks I'm making hundreds of pretzels to give out at the 500, my community will always be the reason I do what I do because when a friend asks for help, you help them- huzzah!
