🌾Chimacum Valley Grainery

This week our breads will include these two blends of stone milled Organic flour(and their Rye)

Confluence is a blend of hard red, hard white, Salish blue and rye.

Climate Blend features four varieties of wheat planted all together with the goal of creating a diversified seed stock resilient to changing climate conditions. Hard Red Soring Wheat, Two Purples, and a blue.

🍞 Who’s ready for sandwich bread?
I’ve acquired a good amount of strap pans to do some production!
As much as I love naturally fermented bread, I really like a yeasted sandwich bread. Yeast has gotten a bad rap and that’s a shame. It’s not the yeast, it’s really all the garbage ingredients that go with it in large scale commercially produced bread. Let me know your thoughts in the comment section!
