A little behind-the-scenes look from this past weekend 👀😭😂

On Friday, our main oven stopped working, so we packed up the essentials and moved production back to our old kitchen. Our team was incredibly flexible, and David spent the weekend making 1:30 am trips transporting proofed pastries between kitchens to keep things running.

Then on Saturday, a rack tipped over while unloading, and we lost nearly half of our production.

It was a stressful few days, but we’re so grateful for our awesome team and our customers, who were patient and understanding despite our limited stock.

I almost didn’t share these photos, but I figured it’s always a good reminder that not everything we see on Instagram is picture-perfect, and that’s okay.🙌

Hey everyone👋

Just wanted to clarify a few things from the story we posted yesterday.

We recently moved into a larger production kitchen space inside . We needed more room and more electrical capacity for our equipment. As you can see in the photos by , our previous kitchen was very small.

That said — we are NOT leaving 2907 S. Archer Ave!

We’ll still be baking fresh pastries Thursday - Sunday and serving everything at our Bridgeport shop, just like always.

We’ll be closed Thursday, May 21, while we get settled into the new production space, but we’ll be back Friday, May 22 for regular business hours.

Join our team as a Barista/Front-of-House Associate. We’re looking for someone with customer service experience who thrives in a fast-paced environment.

🗓️ Schedule: Thursday to Sunday, 8 AM - 3 or 4 PM
💰 Pay: Based on experience

Responsibilities:
* Opening and closing duties
* Greet and assist customers with pastry orders
* Keep front-of-house clean and inviting
* Communicate clearly and receive constructive feedback
* Take detailed orders (coffee blend, dairy & sugar preferences)
* Prepare beverages following recipes
* Process payments
* Maintain a clean barista area
* Stock and replenish supplies
* Ensure brewing equipment is working properly
* Make pastry boxes
* Care for front-of-house plants
* MUST BE ABLE TO DIAL IN ESPRESSO AND USE A MANUAL MACHINE

Pastry Assistant — Full-Time (Wed–Sun)

We’re a tight-knit pastry team looking for someone who’s ready to jump in, stay organized, and keep up in a fast-moving kitchen. If you take pride in your work, are open to feedback, and enjoy being part of a collaborative crew — we’d love to hear from you.

What you’ll be doing:
🥐 Dough production, lamination & shaping
🍰 Filling prep, baking and finishing pastries
🧼 Daily cleaning + occasional deep cleans
☕️ Supporting FOH when needed — we all pitch in

Requirements:
💪 Must be able to lift 50 pounds
⏰ Reliable and able to work early morning shifts (Wed–Sun)
🤝 Team-oriented with a positive attitude
📚 Relevant kitchen or pastry experience preferred

We’re a small business, so adaptability is a must. Shifts start early, Wednesday through Sunday. Pay is based on experience, and we’re looking for candidates with a relevant background.

We were so lucky to have spend the morning with us last Saturday. We’ve been fans of his work for a few years now, so it was such a pleasure to have him stop by and capture some content with us.

Here are a few behind-the-scenes glimpses of our mornings. As you can see, we’re currently doing everything out of our tiny oven—it only fits four pans at a time!

We’re hoping to expand our production soon, but for now we’re really grateful for this setup that’s allowed us to be part of so many of your weekend routines 🌇🫶
