As more and more produce crops up at the market week after week, we gear up for a summer full of all things green, sweet, and plucked from the ground. Introducing: The Market Pastry
Ramp & hickory nut pesto, baked egg, and roasted ramps
Meet the market pastry. Inspired by our origins as a booth at the Green City Market over 10 years ago, this pastry has us getting back to our roots in a super delicious way. The pastry is a vessel for whichever ingredients look best at the market and inspire us to create something that honors the season.

This week, the fragrant ramps from Ellis Family Farm caught our eye, so we created something that celebrates this super-seasonal ingredient that gets everyone buzzing in early Spring. We created an ultra savory pesto with toasted hickory nuts from Froggy Meadow Farm; the curious little nuts taste like pecans toasted in butter and add an incredible depth of flavor to the pesto! We scoop the pesto into a flakey danish square, and top it off with a baked egg, roasted ramps, and a sprinkle of chile flake. The pastry was an instant staff favorite and is bursting with amped-up ramp flavor. Available for a short time, you'll want to get your hands on this before it's gone!

Celebrate Earth Day the Floriole way.
Our menu revolves around seasonality and celebrating the bounty in our own backyard. Sourcing from local farms, using organically grown ingredients whenever possible, and building our menu around what looks best at the market has always been our philosophy. Avoiding waste and getting creative with leftovers is another core tenet of the way we operate.
Case in point: our limited-edition Compost Cookie!
We were inspired to put everything but the kitchen sink into these sweet and salty Compost Cookies. This cookie has everything: leftover Easter candies, salted caramel milk chocolate, potato chips and pretzels, a handful of coffee grounds, and a dash of smoked paprika. This cookie is filled with the odds and ends of our pantry, and is better for it! Strangely addictive, with no waste in sight. Grab yours before they're gone forever!

Spring has sprung at Floriole.
After months of hibernation, we are ready to get back into action. Market season kicks off, the sun shines brighter each weekend, and we see the first signs of life popping up on our rooftop garden. The bakers have been at work giving a much-needed Spring revival to our menu and whipping up some new specials to honor the change in season. Honey Cake for Ukraine Relief
Our take on Michelle Polzine's 10-layer Burnt Honey Cake is made with Ellis Family Farms honey and is delightfully complex and not at all cloying. In
solidarity with Ukranians' unending strength in the face of unimaginable hardship, all sales of our Burnt Honey Cake will be donated to World Central Kitchen to provide meals for refugees fleeing Ukraine.

Domaine Milan Wine Tasting
Organic & Biodynamic
This Saturday 3/19 from 10:00-11:30 we are so excited to be hosting a wine tasting for a selection of Domaine Milan wines. Domaine Milan is a family-owned wine producer located in Saint-Rémy-de-Provence, France near the northern foothills of the Alpilles Mountains. In addition to organics, Milan is also committed to biodynamics and uses the lunar calendar to guide their farming, along with a horse named Mistral who works the land. Milan and his children subscribe to the natural wine camp and work minimally in the cellar, so that only native yeast fermentations take place.

A few changes . . .
On Monday the City of Chicago lifted its mask mandate. Moving forward, masks will be optional for bakery guests, but our 100% vaccinated team will continue to mask until further notice.
We now have additional seating available towards the back of the bakery and our patio seating will be available as weather permits. We are asking all customers to limit their dining to no more than one hour.
