🍪 Ever wonder what actually happens before a new item makes it to The Magpie? 👀

I don’t like pulling a random recipe off the internet, making it once, and calling it good. When I decide I want to add something new, I like to start from scratch and develop my own recipe — and that usually means a LOT of trial and error. 😂

Right now, it’s bagels. 🥯

And let me tell you… I have eaten a LOT of bagels lately. 😂

Every batch teaches me something. Too dense. Too gummy. Not enough air. Too ye**ty. Better flavor, wrong texture. Change the flour. Change the ratios. Change the proofing time. Try again.

And again.

And again. 😂

Recipe development takes days and days and hours and hours, and unfortunately, it also means ingredients get wasted along the way. Flour, eggs, yeast, oils — plus the things I test that simply aren’t good enough to sell. It can be frustrating to spend all that time and money on something only to cut it open and realize… nope. Back to the drawing board. 🤦‍♀️

But that’s also one of my favorite parts of what I do. ❤️ I don’t want something to make it to the stand just because it’s “pretty good for gluten-friendly.” I want it to be GOOD. Period.

So when you see all these ridiculous bagel pictures I’ve been taking… 😂 this is what’s happening behind the scenes.

We’re getting closer. 🥯👀

And someday, hopefully soon, all these sacrificed bagels will have served a purpose. 😂❤️🐦

❤️🐦 What a Magpie Monday!

Thank you SO much to everyone who stopped by today! We came so close to completely selling out, and I couldn’t have asked for a better way to spend our bonus Monday at the stand. 🥰

I wasn’t sure what to expect opening an extra day, but you guys definitely showed up! 🍪❤️

I hope everyone has a wonderful Labor Day, and thank you, as always, for supporting my little roadside stand and all of my crazy baking ideas. 😂🐦
