Here at Wendel Cakes we try to find that perfect flavor combination...often thinking outside the bakery box, if you will...to bring your taste buds to a place they didn't even know they wanted to go, but are sure glad they did! We welcome failures (hopefully not too often!) because it compels us onward to more creativity. It is our firm belief that our cakes, cookies, pies, etc. Looking good is im

Life’s got me by the throat these past few months. Haven’t spent too much time on Social Media, but thought maybe I’d catch you up with a big ol pile of winter desserts—including 2 special birthdays.

Doing a test run on a couple of Fall Specials.
The After School Special consists of a 5 cookie plate featuring: oatmeal raisin, ginger molasses, peanut butter, chocolate chip, and snickerdoodle.

And for the cheesecake folks: a creamy pumpkin/maple swirl in a gluten free ginger snap crust.

So far, so good!

Oh and apple crisp is cooling and will be back on the regular dessert menu this week.

Dark cherry filling in a tender buttery/lardy crust, topped with a crumb crust. Huge hit with the staff!

Some people make or buy biscuits or an Angel food cake to have with their strawberries and whipped cream. That’s cool.
But as for me—I’m all about the drop scone!
A tender, never dry interior, with a slightly crisp crust; cut in half and gently warmed; then a couple of heaping spoonfuls of fresh, macerated strawberries with some juice to soak into the scone; finished with a huge dollop of Chantilly cream!

It’s been a while….
I chatted with a young lady I had just met at a new church we are trying this past Sunday. Naturally baking came up, and within seconds she asked if I could make a gluten free cake for her sister’s birthday. Why yes!
I hope the birthday girl enjoys her 3 layer GF chocolate cake with chopped strawberries and rich and creamy ganache. It was nice to flex those muscles again.

Today was all about the “let’s see if I can do that.”
I made another “Uncle Bill’s” cheesecake the other day, but something went a little wrong this time. Being a natural think outside the box/problem solver type person, my gears began turning. Today I turned an “uh oh” into a Black Forest parfait—cookies and cream cheesecake, layered with crushed gf Oreos, and better than ever sweet dark cherries. A hit!
In other news, the restaurant sells big soft pretzels as an appetizer. They come frozen in their own bags, but sometimes they arrive broken. Can’t sell!
Soooo what’s a Wendel to do??
Today I made them into Salted Caramel Pub Pretzel Pudding! (And who doesn’t love a triple alliteration??)
It was a huge hit!

Today was fun. 😊
