If there ever was a time I told you you HAVE to come to batch, that day is tomorrow. We are rolling out (heyo! Literally🤭) our danishes with DULCE DE LECHE PASTRY CREME and topped with a chilena. The kitchen manager whos been here with me 6 years, and ive known her and been friends for about 10 years said and I quote: “that is the best thing to ever come out of our kitchen” so- come at 8am. We only have a few. If you try it, TELL US WHAT YOU THINK HERE so we can keep making them and others can also buy them.

WHO KNOWS THAT COW STANDS FOR? Funny thing ive learned working in a kitchen is how many words/phrases we shorthand. Ocp, fifo, mise, hco, cow, ddl, vb, hpo- ha! Anyways who can guess any of these and or more specifically COW. One time in the very beginning a doctor reached out to me on here and said OCP means something completely different in the medical world than for me (oatmeal creme pie) and it made me giggle, ill never forget (she meant ORAL CONTRACEPTIVE PILL) ha! 🤭🤭😹🤣😂

SHES A BADDIE OR WHATEVAAAAAAAA. Took us seventy three years to perfect it (but whos counting) and I think we have nailed it- I would also like to publicly say that croissants (to me at least, im not a trained baker, I learned by myself every single thing I know) are about so much more than a recipe. Its proving, baking temps, humidity, salt in the butter, temps of the butter- all. The . Things. And one little variable can make or break it. Sydney has grabbed everything weve learned in the last two years and organized it and tweaked it to get us to a point where we can start making them at the bakery without clenching from anxiety. If you see her you can thank her for being a constant and calm and collected chica that got us here! Now, I have a meeting w kitchen manager on weds to chat about WHEN WE RELEASE EM OFFICIALLY.
