When you’ve got a special Mother’s Day weekend order for a coconut cake, you deliver - literally!😉 Two layers of soft coconut cake, and the request for the icing was simple: keep it light, not too heavy. So I improvised from the original buttercream and made a super fluffy whipped cream cheese icing, folded with fresh whipped cream. Finished her off with a full coating of sweetened coconut flakes for that perfect coconut bite in every slice 😋 Message me to order yours! 💌

This is the “smaller” version of the Berry Chantilly Cake I made a few weeks ago. Well, what I thought would be a smaller cake…turns out there’s really nothing small about a 4-layer cake! 😉

Each layer is filled with fresh strawberries, blueberries, raspberries, and blackberries, all wrapped in a light, fluffy Chantilly style icing. It’s like whipped cream, but even better, made with mascarpone and cream cheese for that perfectly rich (but not too heavy) finish.

Whipped this beauty up this morning to take to my mom’s - a delicious berry chantilly cake! Four layers of sponge cake, filled with strawberries, blueberries, raspberries, & blackberries!
