Wheat is 30% of our diet. It’s time we treated it with reverence. 🌾
I am a miller, not a farmer. But as a miller, I hold the key to how the farmer treats their land.
For too long, the food system has demanded “high-protein, high-gluten” grain—forcing farmers into a chemical-led, high-plow cycle that strips the soil and ruins our health. We’ve broken that cycle.
At , we don’t ask the soil for “stretch” or “strength.” We ask for flavor and nutrition.
Because we’ve invested in small-scale, appropriate milling technology and a diverse range of products—from Lion’s Mane pasta to 28% fiber biscuits—we can use whatever the Earth wants to give us. Whether it’s Rye, Barley, or Ancient Wheat, we can process it.

30% upcycled fibre chocolate biscuit. Hi everyone, I’ve been deep in the lab/kitchen for years to get us to this point, and I’m finally ready to shout about what we’ve built. I want to run this positioning by you all before we take it to the BBC Food & Farming Awards.

In the UK, chocolate husk is usually just a tea ingredient. We’ve turned that on its head. By integrating 33% upcycled chocolate husk into our “lemonade” bran ferment, we’ve created a biscuit that is nearly 30% fiber. That’s almost ten times the fiber of a standard digestive.

Because of our double-milling and long ferment, those tough fibers become a “soft crumb” that’s incredibly moorish.

I’d love your honest take on three things:

For those who’ve tasted it: How does it actually make you feel? Does that “long-lasting chocolate” and “moorish” description land for you?

The Message: Does the idea of “upcycling waste into high-performance nutrition” excite you, or should we talk more about the flavor and the “bliss” of the husk?
