Pov: Single tiered wedding cakes have a beauty all of their own!

When I saw these stunning images of Adam and Jasmine’s wedding cake by the incredibly talented , I realised just how much I loved single tiered cakes.

These photographs made me realise that one large cake smothered in Swiss Meringue buttercream and covered in beautiful edible flowers has all the impact of a tiered cake. Thankfully, single tiered cakes can alas be refrigerated until cake cutting time (such a relief in this heat!) which gives buttercream and flowers a longer life too!

Adam and Jasmine chose a roasted strawberry and pistachio cake with a strawberry compote and custard filling which I delivered to the restaurant where chef, Adam creates absolute culinary magic! What a privilege it has been to make your wedding cake!

Pov: you choose to get married in Spring in Devon

Spring in Devon is just so beautiful with a warm, pearly light and hedgerows teeming with pastel coloured wildflowers. A group of us wanted to showcase just how beautiful Spring can be at this beautiful new wedding venue

A dream team of wedding creatives all came together and brought so much Spring magic with them! It was a celebration of Springtime Love and my contribution was a rectangular sheet cake with white chocolate sponges and strawberry compote with textured Swiss meringue buttercream and the most exquisite edible flowers from Of course these edible, tall pansies stole the show alongside peachy stocks.

“It was everything we dreamed of and more” Alice and James

When I hear you describe your dream wedding cake at our cake tasting with words like ‘soft’ ‘pastel’ ‘pinks’ ‘whites’ ‘floaty’ - my heart is dancing with joy! (I don’t think I ever manage to hide it!)

My wedding cake ‘designs’ are driven by what is growing in the flower field just hours before your wedding. Georgina picks the most beautiful edible blooms according to your colour palette and style notes.

Seeing these insanely beautiful photos from brought the memory of this day flooding back. I’ll never forget the heat on this day, I think it was the hottest I’ve ever known whilst setting up a wedding cake!

Spring weddings always hit differently….

Fluffy, frilly, white and cream edible flowers like tulip (flowers only) and tall Bellis daisies and tiny white forget-me-knots won’t be around for long.

The ephemeral nature of Spring edible flowers makes the cakes they adorn extra magical in my opinion. Working closely with Georgina, a local flower farmer is always so inspiring - we call this our ‘white and fluffy’ aesthetic! You see I have my very own cake design partners - Mother Nature and Georgina

Setting up this beautiful cake I was struck by the way the light in Spring felt different from any other time of year. Spring sunlight bouncing off the sea just highlighted the exquisite white and cream tones of the edible flowers from and the beautiful floral displays from

That first mouthful of cake HAS to have that ‘oh my god’ reaction!

Your cake fillings are hidden from the outside BUT they are what transform your baking! When I’m doing wedding cake tastings with my couples, my favourite moment is when they take their first bite and say “oh my god!”

One of my most popular combos is this white chocolate fudge cake has white chocolate ganache filling, a layer of raspberry mousse and a swirl of freshly made raspberry compote.

The silky Swiss meringue buttercream base layer and border is so light it works beautifully with so many different combinations.

It’s worth making all of your fillings from scratch so you can vary the levels of sweetness and create that tang or tartness to offset sweetness. For example, I like to make my lemon curd quite zesty and sharp.

Contrasting layers of flavour - sweet and sour, tangy and creamy, all add to the wow factor

I always encourage my clients to ‘build’ their own cake layers by adding meringue or cookie crumb.
