I need to perfect the chocolate ganache on the wreath as it started collapsing whilst trying to cover 😭😂
I did manage to make mini ones with leftovers using doughnut moulds and these will definitely be made again next year!

So here it is.....
I think this might be my best "cake" creation yet!
I'll get photos of inside when we cut in to it later.

I've named it "Brookie Monster"

It's 8 alternating tiers of Oreo Brownie, White and Milk Chocolate Cookie sandwiched and covered with Oreo cream cheese frosting, finished with a milk chocolate drip, edible cookie dough and topped with double chocolate cookies, caramel cookies, birthday cake cookies, Cadbury white chocolate oreo bar, Hersheys white and milk cookie bars, Oreo caramel wafers and double stuffed Oreos!!!

Apart from the branded toppings it's all home made 🙃

Have no idea how I'm going to transport it - it's huge and weighs a tonne!

We have a Birthday which is a great excuse to try something new!
Here it is, the mega cake. 8 layers of biscoff flavoured sponge, biscoff flavoured buttercream, homemade caramel topped with a biscoff drip, biscoff spread, biscoff biscuits and homemade thick caramel.
I can confirm it tastes amazing! This will definitely be featuring by the slice once I'm ready to go live. I will also be happy to quote for a full cake.
I have another mega cake to attempt soon as well.

I had a go at making a cookie dough swiss roll yesterday.
The heat wasn't kind to the mix at all so need to keep practicing (shame) getting distinct layers.
However, it tastes so good! This is totally raw cookie dough (heat treated flour to ensure no nasties/no egg) filled with biscoff spread and crushed biscoff biscuits to add crunch 🤤
Once I've mastered the sizing and rolling I'm sure it will be making an appearance on my menu.

The result of the past couple of days.
Treat box for a form tutor.
My cooffins and cookie toast are not just a token piece of whatever treat I name it after stuck on the top, they are both filled with chocolate ganache and treats.
At the moment I'm still baking for the sheer love of it (no money exchanges hands, it is not a business - yet!).
But keep your eyes peeled as I am planning my comeback for summer bringing back my infamous Tiffin, Rocky Road, cakes and scones as well as brownies, blondies, cheesecakes and more combinations of cookies than you can shake a bag of chocolate chips at!

My baby only has 5 days left of school so I'm currently baking to say thank you to her form tutor who's been a constant support for the past 5 years.
I'm putting together a little box of various treats, some never attempted before 🙏🤞Photos of these later.
In the meantime, enjoy drooling over my last bakes (made as always for my dance family) including Munchies cookie toast, cherry bakewell blondies, mint brownies and caramel and white chocolate blondies.
