That long fermentation isn’t just about flavour. It gives the natural cultures time to work on the flour itself. Time to break down compounds found naturally in grains, unlock nutrients, and create the depth of flavour and satisfaction that bread was known for long before factories took over.
Fast bread is built around efficiency.
Traditional sourdough is built around transformation.
That’s why we ferment our dough for 48 to 72 hours. Not because it’s easy. Not because it’s cheap.
Because we believe flour deserves more than a few rushed hours before it reaches your plate. 🌱
