Summer salad for the weekend 🍑🥗 Grilled peaches, fresh greens, tomatoes and crispy Lemon Mini Cookie-crusted goat cheese, all tossed in a bright lemon vinaigrette.

Quick recipe:

Grill peach halves for 3–4 minutes per side and slice.
Coat goat cheese rounds in gluten-free flour, milk, and crushed Homefree Lemon Mini Cookies. Chill, then pan-fry until golden.
Toss greens, tomatoes, peaches and pepitas with lemon vinaigrette. Top with crispy goat cheese and fresh basil.

Want to make it dairy-free? Simply swap the goat cheese for your favorite dairy-free alternative! 🍋
