Flour Power Bakehouse Hello! We are a small batch cottage bakery, baking 100% wild and naturally fermented artisan bread and sweet goodies. Sprinkled with micro farm and sewing fun!

Thank you for visiting, following and liking our page! We are a 100% wild and naturally fermented (Sourdough) bakery. All of our loaves are made with wild yeast and love. Our sourdough starter is going on her 14th year! We have a CT cottage bakers licenses which allows us to bake from our home. Being a one-women baker operation, We are a VERY SMALL batch bakery. We try to keep things on a small sc

ale so we (yaiyai) don't get too overwhelmed and so that we can give you the best product possible. We also only bake on the weekends. The order form goes live Sunday morning and closes Wednesday evening-ish. Pick up is at our bread shed, typically on Friday afternoon after 4:30p but sometimes Saturdays or Sundays. It is a honor system - self serve- come when you can/want. The pick up date will noted on the weekly Facebook/Instagram posts, order form and confirmation email. When ordering for the first time, please enter an email address to receive all the pick up details. Also, please send me a direct message to establish contact after ordering.

** Please advise if allergies or inquire about ingredients if there are any hesitation. We are not a nut free home and process all common allergies within our home kitchen space. Thank you visiting and I hope to bake for you soon!!

I really like this score on this pumpernickel rye… I may need to change to this moving forward… It makes a more even loaf without that ridge from a straight vertical score line. I like it.

Pumpernickel Rye:
450g Bread Flour
50g house stone milled Rye
360g H20 (72% Hydration)
100g Levain at peak (100% hydration, 5% whole-wheat )
10g Kosher salt
5g Instant coffee granules
20g Molasses

This dough likes a long warm bulk. I try to keep my dough above 75 but below 80. Don’t rush the bulk.
I can’t remember how long I bulked it but probably for about 6 hrs.
