I have so much eggplant to use up so of course I made Baba Ganoush with fresh milled whole wheat pitas! It was supposed to go with dinner but it is so good we couldn’t wait. What are your favorite eggplant recipes?

It’s going to be a beautiful day today so come on out and see me and all the other awesome vendors! I’ll be at the Willimantic Farmers' Market from 8-12 and the Storrs Farmers Market from 3-5 and I’ll have sourdough loaves (traditional, everything bagel, cinnamon swirl), rosemary olive oil sourdough focaccia, and scones (blueberry lemon, cranberry orange, and maple pecan). I wanted to give an update on Pacey since many of you have asked. By last Saturday, we’d all said goodbye because he had deteriorated so much and couldn’t get up or eat. Monday I brought him to the vet again thinking the worst but saw he still had fight in him so he stayed there in-patient for 3 days and is home now and has improved significantly! He’s walking, purring and eating again. All the tests and X-rays didn’t add up but the best guess at this point is that he developed triaditis that was caused by FIP (neither of which I’d ever heard of) so we’re treating both. I currently have to give him injections which is awful but I’m hoping he’s going to pull through. Of course I know things could quickly turn in the other direction but for the moment he’s home and making progress 💕 Also, a special thank you River Road Vet for being there in our saddest times and for literally all the staff for being so compassionate and invested. They are so appreciated.

I’ll be setting up the farm stand today at 2:00 with eggs, slicing tomatoes, sun gold cherry tomatoes, summer squash, eggplant, peppers if I can get out picking, and limited yeasted French bread, sourdough bagels, traditional sourdough and cinnamon swirl sourdough.
