A client sent me an AI-generated mermaid cake and asked if it was possible to make in real life. 🧜

AI designs ignore gravity, physics, and reality—so instead of just copying it, I wanted to out-design it. Hand-sculpted seashells, edible sand, a custom handmade mermaid figurine, and real built-in LED lights to capture that dreamy underwater glow.

Dark buttercream should not require turning an entire batch of white frosting into food dye. For deep shades, I make the cake natural white, then add a small amount of gel color and apply it as a thin outer coat over a white buttercream base. You get the dramatic color while keeping the buttercream tasting like buttercream. Which dark shade should I break down next: black, red, green, or navy? This year they asked for two versions of the same cake. Both loaded with fresh strawberries, raspberries, blackberries, blueberries, cherries, and candied orange — finished with gold leaf. ✨
