Wishing everyone a happy holiday season and a 2025 filled with all your wishes and always the best bread.

I want to take a second to thank everyone who has supported my little homebaking business this year. I am so grateful for all the love and orders.

This is my dream job, what I love to do and in the mist of so much grief the past couple of years, it gave me hope and kept me going.

Bolo Rainha (Queen's Cake) is a staple at any Portuguese Christmas table when you don't really like it with candied fruit.

It's my favorite, so I had to try to make it with Sourdough instead of yeast, and I also decided to fill it with cinnamon sugar and roll, so it's not so dry.

OMG! This is my take on the only christmas goody I like, and it turned out delicious!
The original recipe is made with Port wine, but I didn't have any, so I added Portuguese Ginginha ( Cherry liqueur), and It's still as amazing as the original.

Soooo good! πŸ˜‹πŸŽ„πŸ°πŸ‘Έ

Oh my.... There's testing, and there's testing, and this one literally blew me away! πŸ˜‹πŸ₯–πŸ§€

I had a vision that started with cranberry jam, so I tried to make something different, and this 100% organic, homemade Cranberry Strawberry and Rosemary Jam turned out scrumptious!
I wanted to offer a pull apart type of bread with baked brie and a showstopper jam, so here you go!!
My last (I think) holiday menu adition will be a round sourdough bread loaf, that I'll cut the center to fit a brie cheese, I'll drizzled it with roasted garlic olive oil and add a side of my delicious Cranberry Strawberry Rosemary Jam, so just need to get that brie and follow baking instructions.

Nothing beats a pretty and delicious sourdough bread πŸ₯–
Just 3 simple ingredients, filtered water, organic flour and natural sea salt, and 18-20 hours cold fermentation make this bread a piece of heaven.
I use a mixture of organic bread flour and organic whole rye flour for this bread because the whole grains give it that delicious extra flavor and the extra gut health benefits.

Sweet things are coming πŸͺ

Trying some different options, using the same base of my delicious Sourdough Chocolate Chip Cookies.
Bought some coconut flakes, all kinds of different baking chips, like caramel, peanut butter, butterscotch, English toffee bits, and creme de menthe, so I can try a few options. I also got some mini marshmallows so I can give it a go at a S'mores cookies.

Let's see how that goes πŸ™πŸ»πŸ˜Š

I have too much sourdough discard, so I'm using it to make delicious goodies.

Yesterday, I made some brown butter chocolate chip sourdough cookies, and OMG!!! 🀀πŸͺ

I'm going to be making A LOT of these for sure!

I've never had so much discard before, so I would always use it for brownies and would be fine. This time I made brownies, Lemon cake and cookies, and still have a ton, so I'm hunting for more recipes that use sourdough discard.

This is the leftover unfed sourdough starter after you've used it for all your sourdough baking.
We always need to keep some, but what I've got at the moment is absolutely ridiculous and taking so much needed fridge space.

Love the fact that there's almost no waste and that I can create delicious recipes using left over starter.

Soooo, that's a big oopsy daisy on the day before I leave for a 3 week vacation πŸ€¦β€β™€οΈ

36 sourdough bagels I left out of the fridge overnight, so they are severely overproofed and good to be trashed 😭

This is the proof that sleep matters, and I haven't had a good night sleep in weeks, worrying about leaving enough bread to stock the Cafe I work for.

Now I'm back to fixing it, meaning start again and make another 36 bagels.
To speed up the 2 day process, I add warm water to my starter to make it reach peak quicker, and I won't be cold proofing them, they will proof at room temp, hopefully, for less than 8 hours, so the same doesn't happen.

I'll make it work. It just means that my Saturday is going to be extra busy.

So much work to waste is heartbreaking, but it happens, and unfortunately it's not just a case of adding yeast when it comes to sourdough. We have to respect it's timing.
This is why it's a labor of love πŸ‘©β€πŸ³πŸžπŸ§‘
