When I checked my sourdough bread dough this morning, I quickly realized it was over proofed. That means I had left it to rise for too long and the dough gets very sticky.

The bad news is you can't make sandwich bread from dough that is over proofed.

The good news is, that same dough makes AMAZING focaccia bread!
