Never poach an egg without emotional support😂 Here’s how I make poached eggs on toast at Swift Planet HQ:

1. Bring water to boil, add 1 tsp white vinegar 🚰
2. Crack eggs into bowl, add one at a time to water 🥚
3. Cook for 2-minutes and 15-seconds, reduce heat to keep water from boiling over ⏲️
4. Toast your Gluten-Free English Muffin and top with poached eggs, remembering to find a loved one to ooo and aaa over your perfect yolk 💙
5. Salt and pepper to taste, cut and enjoy! 🥳

Moofin/Moon-fin. 🌒🌑🌘

“Swift Planet” is the nickname for the planet Mercury so it should be no surprise that Artemis II has been top of mind this past week. I’ve baked along to the NASA livestream, annoyed many customers with mission updates, and generally stood in awe of human perseverance and ingenuity. And if this post is any indication, I’ve stared far too long at a toasted English Muffin and thought, “This could be the moon.” 😆

Artemis II crew is set to come home today. Thank you for a ray of hope in dark times. Now: back to baking.
