This dough was a dream to work with. Nice and pillowy. Made with whole wheat, spelt and rye flours and a mixture of seeds.
How to tell when it’s ready to pre-shape:
Dough doesn’t stick to your hands; pulls away cleanly from the tub, its jiggly, it feels like marshmallow.

The best surprise tonight after work. Found a hidden Italian herb & cheese loaf and of course I had to make fresh meatballs and marinara sauce. The best combo. If you haven’t tried our new flavor last week, we are making it again this weekend. 😋 We couldn’t wait for the loaf to cool down ☺️

I love a hearty multigrain loaf. Lots of flavor from a mixture of whole wheat, spelt and rye 😋 added a little bit of Chimacum Valley Grainery hard red wheat to the mix. So delicious 😋

This isn’t exactly sourdough related, but wanted to share with some of the nature encounters from this week. This little squirrel was looking for food so shared some nuts I got from the market. Super sweet and friendly. Not sure if it had babies. This poor bird flew into the building I work at. After some pets and a little bit of water, it seemed to do better and it was able to fly again. 🙂 🤔

Love experimenting with different inclusions. This strawberry and white/milk chocolate is perfect combination of crunchy crust and soft and tender crumb. Perfect desert loaf.

This loaf turned out extra toasty but fermentation was on point 🤌🏻 Keeping this one for myself to enjoy 😋

Finally got to use my lifters 🥰 Thank you for making them fit .forno They work so good and no more burnt bottoms ☺️
