How much fermented food is a good amount? Is more actually merrier?

Ever heard of Filmjölk? What about mesophilic yoghurt? despite being hard to pronounce these are so easy and fun to make and require 0 special equipment! If you’re wanting to try a new ferment then this is a GREAT gateway drug:)

Filmjölk is a traditional Swedish cultured milk drink, similar to yoghurt or kefir but milder and creamier. It’s made using a mesophilic yoghurt culture — meaning it ferments at room temperature rather than needing heat like standard yoghurt. Easy, tangy, full of good bacteria, and surprisingly simple to make at home.

And it’s not just sourdough! Fermented foods can include: yoghurt, kimchi, sauerkraut. And those are just the more “alive” ones! Did you know that historically, tea,
coffee and chocolate were fermented, too?

Two traditional white sourdough boules.

When baking, I use a Dutch oven for the first 20 mins with the lid on. Then I remove the lid and put the loaves back in the oven. So they’re in and out a couple of times. Opening the lid after the first 20 mins is often an indicator of how the loaf might turn out. This batch was good :)
