Today's question is about our beloved trademark Jelly Sticks pictured here. They are made from our pastry dough which is quite simply just flour, water, salt, & margarine. Conversely it's the process at the bench that makes this "recipe"complicated. What gives rise to our pastry dough is the layers of margarine and the air created by folding and rolling, folding and rolling, folding and rolling, and so on. So not to melt the shortening too much in the process, the dough gets chilled in the refrigerator for periods of time too. Most modern bakeries since the 1950's have used a dough sheeting machine in place to repeat this process with ease, speed, and uniformity. At Haegele's, we have a rolling pin, the bench, and two hands. There's simply no room to add any more equipement to our originally laid out bakeshop. So yes, our pastry dough is hand rolled & folded like "back in the day". Once the dough is ready, it's rolled out the length of our bench, spread with raspberry jelly, folded again, and cut into strips with a hand held cutting wheel. Each strip is picked up, twisted, and placed on a baking sheet with sugar. Out of the oven these sticks get cut in half and stacked on the long narrow pans you see in our store. Today's batch of Jelly sticks is pictured here and stacked on 3 pans. Today's Question is: HOW MANY JELLY STICKS ARE IN TODAY'S BATCH, sitting on those three pans??? And yes, I counted them!
