Here we go with the next in our SUMMER MAGIC series:
Stone fruit and berry galettes!
We start with incredible June Pride peaches from the cool kids doublewildfarm and cook them with organic sugar and lemon juice and a little corn starch so they don't leak everywhere. We also put several whole vanilla beans in there for fun. Off the heat, we add a lot of crazy flavorful obsidian blackberries from our friends Front Porch Farm and swirl it all together.
These get baked in our Straus Family Creamery butter and The Central Milling Company organic einkorn flour crust.
We top it with the biggest spoon of whipped Straus Family Creamery cream spiked with sea salt and creme fraiche we can fit on it and then one little beautiful viola from the fam Moira & Jesse (love them).
They are crazy labor intensive to make and crazy awesome to eat.
I love them very much and look forward to this every June.
