I do love a slice of pecan pie, but sometimes a large pie is a little too much. Here i have little pecan pies and mini pecan pies. Same sizes as the Bakewell tarts I have. Nice with a dollop of fresh whipped cream.

That’s 8 6”x3” fruit cakes made. Equivalent to a 12” square fruit cake. Total weight 13lbs!! Using a John Silverwood multi size cake tin. Smells lovely. All cakes that have been ordered are baked and will be fed now until it’s time to cover.

Lots of questions about the cakes so these are examples of past Christmas cakes. The smooth icing is fondant, its a firm soft sweet icing, slightly chewy. The rough textured icing is royal icing it is a hard sweet icing that is crunchy and will crumble a little when cutting the cake. Probably what you remember having growing up. Under those icings is a layer of almond marzipan. All cakes contain nuts (almonds)and alcohol (brandy). Decoration is different on all the cakes. Edible images will have something I consider very English, a robin, postbox, church etc. Plastic pic decorations need to be placed on royal iced cakes when making so not suitable for posting. On the fondant cakes plastic pics will be left off for posting. the bar 6x3 cake only has a layer of marzipan and fondant on the top. A Christmas cake frill will wrap around the sides.
