Back when our original bakery opened on Sullivan St. there were galleries everywhere and it was a luxury to sneak away to check out a post-apocalyptic installation by the Chapman brothers or the latest incarnation of Cindy Sherman and so many more. Eventually, they all left, replaced by boutiques to become the Soho we witness today.
How exciting to once again be on the edge of a burgeoning art scene, to have galleries to sneak away to, to be inspired again, and to have our delicious boccini mentioned.

Our pizza pugliese - a seasonal favorite is out of the oven!
One way we love to celebrate summer is baking with fresh tomatoes from the 🍅🍅🍅🍅🍅
Baked in pizza Bianca with a bit of garlic and a sprinkle of sea salt, each tomato rests on an oregano leaf and bursts with juicy flavor when you bite into it. Wow!

We grabbed these cherry tomatoes at the farmers market and place a fresh oregano leaf under each one for an extra burst of flavor (along a sprinkle of sea salt and a drizzle of evoo).
Along with this delicious cool weather, il panino caprese has arrived!
We slice open a ciabatta and place fresh mozzarella di buffala, slices of heirloom tomatoes, fresh basil leaves, sprinkle salt and pepper, and a drizzle of EVO to make a sandwich that gives new meaning to the phrase "simply delicious!"

Our head baker found these beautiful heirloom tomatoes at the Union Square Market this morning.
This means that we have one of the key ingredients for our seasonal panini, the Caprese, ready.

Ciabatta are made with a very wet dough producing a very light loaf with an irregular and airy crumb structure.
Here they are resting on flour beds before going into the oven.
Fun fact - the irregular shape suggestive of an old-fashioned slipper, a ciabatta in Italian, is how this loaf got its name.
