My sweet nephew is turning seven today and when my sister asked me If I could make him a cookie cake, I wasn’t expecting the theme to be “Squirrels!” 🤣

BUT it turned out way cute and I love it!

I tried my very first buttercream transfer and it’s not too bad!

My very first cheesecake! I made one for my brother in law and then my husband is a cheesecake lover so naturally I made us one 🫣

Found the best recipe to follow, no water bath, but a long process.

10/10 would recommend making your own.

Way better than store bought!

Topped it with a fresh strawberry syrup made with organic cane sugar and fresh market strawberries!

Made a sweet birthday cake for my nephews birthday today!

My sister and her family eat clean, so we decided to do a cleaner cake!
We used :
Simple Mills vanilla cake
I made my first batch of Swiss Meringue buttercream and not only was it a success but it paired so well with the cake!
➡️ If you don’t know Swiss meringue buttercream is light and airy with a less sweet taste! I used egg whites, organic cane sugar, unsalted butter, vanilla and salt. Simple just like American buttercream, just a little bit of a different process!

I colored the icing with blue spurlina, and we used dye free sprinkles!

It was a hit!
