Okay friends- I'm going to say this with love:

PLEASE USE THE HOTPLATE. πŸ˜‚

Every week I hear some version of:

"I couldn't get to market until later and the cinnamon rolls were sold out."

"I needed eggs but everyone is sold out."

"You are out of my favorite gluten free/vegan item by the time I got here."

And I understand that not everyone can get to market first thing.

BUT that is the exact point of this new system. If you know you are not a morning person, you have kids that are unpredictable, something come up?

Order it ahead and I will hold it back until you show up.

We are testing the waters this week using it. But starting in September I will only be at market once a month. That means if you want to stock up your freezer, grab extras, ensure you have what you want. Get your butt on it and follow us on our Hotplate account so you can save what you want.

Do not risk it and wait till the day of market, I will only be able to bring so much especially once winter market starts and table space is extremely limited.

So if you say something like "your sold out... again?" its on you and I will hand you the QR code.

Or Ozie Mozie. O. O-laugh. Mozie. Moses. Mr. Cutie Putie Puterson.

He is my buddy, my pal, my baby bun.

I got him back in 2021. At a live stock auction. for $9, he was a early birthday present to myself.

Michael told me no we don't need a rabbit, hell we don't even have anything set up for a rabbit. He then left me to go bid on something somewhere else at the auction and I just sat there watching, waiting. His lot came up and my arm sprang so fast, I would have paid anything for that little white fluff ball. I immediately paid for him and took him out of the cage and carried him around all over the auction. I was covered in rabbit scratches for months from him trying to escape my love.

He's an Angora Lionhead cross to the best of my researching. But coming from auction honestly, he could be anything.

Most people know him or have heard me talk about him.

He's more of a loaf of bread than anything. He doesn't do much but by golly does he need groomed all the time.

He was my first big girl purchase. He was what made me realize I am an adult and I can buy what every the hell I want.

I bought a cheap rabbit. Little did I know he was going to become my best friend.

He was so matted, so covered in knots, so unloved. It took months of grooming and just sitting with him to get him to trust me. But we did it. His favorite time of the week is grooming day. He just sits there and lets me work.

He accepts my love now and just lets me pick him up, carry him around the yard. Kiss on him, tell him he's the cutest bunny around.

I used him for breeding for several years and retired him from his duties about 2 years ago. I think he misses the ladies. But his health and safety are my top priority. He goes in yearly for a sinus clean out (smash nose faced bunnies have sinus issues). He's noisy when he sleeps almost like he's snoring.

Every time he flops my heart sinks a little and I have to go check to make sure he's alive. I'm sure he's not pleased that I wake him from his deep slumber every single time.

I wouldn't trade him for the world.

Welcome to week 3 of Share your favorite recipe Sunday!

Okay, apparently asking y'all to type out an entire recipe was asking too much. 🀣 So we're making this easier.

What did you make this week that your family absolutely demolished?

That's it. Just tell me what it was. Dinner, side dish, dessert, weird concoction your kids inexplicably love - I don't care.

If something sounds especially good, I WILL be harassing you for the recipe. 🀣

I'll go first, our family loves easy enchiladas.

Creamy Chicken Enchiladas

Shredded Chicken (rotisserie, canned, left over it don't matter) about 3 pounds
1 can cream of chicken soup
1/3 cup sour cream
1 block shredded cheese (sharp cheddar, colby, mild cheddar, a mix)
1/2 can corn, drained (store bought, home canned, frozen, fire roasted, again doesn't matter)
1/2 can black beans (rinsed)
Tortilla shells

Take it all and mix it in a bowl. Fill your tortilla shells and roll them up.

Enchilada Sauce
Makes enough for about 2 9x13 pans.
3 TB butter
3 TB flour
2 TB chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp salt
1 15oz can tomato sauce
1 1/2 cups chicken broth/stock
1 tsp brown sugar
1 tsp apple cider vinegar
1. Heat butter until melted, add in flour and make a roux cook for about 1 minute.
2. Add all the spices and stir for a few seconds until smooth.
3. Slowly whisk in the broth.
4. Then the tomato sauce, sugar, and vinegar.
5. Simmer uncovered for 10-15 minutes. Should thicken slightly.

Spay pan first, put small layer of sauce down then enchiladas. Pour more sauce over top so they are covered. Cover with tin foil (spray the underside to keep the enchiladas from sticking). Into a 350 degree oven for about 35 minutes. Pull off foil top with more cheese, back into the oven for the cheese to melt.
Serve with lettuce, diced tomato, guac, queso, chips, sour cream.

This recipe is very forgiving and can be adjusted. Got pepper and onions that need used up? Saute them and toss them into the shell. Got leftover rice. Toss it in.

Only need a few. These freeze great.
Just make the enchilada shells and freeze. Freeze the sauce separately and assemble for a quick lunch or dinner.
