One of the first things new bakers want to do is add extra flavors to their dough. Thankfully, it's so easy to do! For nearly all inclusions, you can just follow your normal bread recipe as written. When you reach the stretch and fold stage, sprinkle your fillings on top before proceeding. The gentle movement of your stretches and coil folds will incorporate your ingredients. Just be sure to work gently to avoid tearing, especially when shaping!
