Made with buckwheat(which is not actually wheat, its GF) and hazelnut flour.
I'll have to test to make sure they are edible, but seem legit :) so that's exciting. Obviously made in a kitchen that handles wheat, in case your super duper sensitive I can't guarantee 100% safety.

Hey Friends!

I'm rarely on my business page here and I'm trying to do better.
I wanted to share an upcoming event!

I will be at JDLF Collective tomorrow, Friday May 1st from 1pm-3pm with Polsgrove Hill Farm for a Meet The Producer event!

I will be highlighting my dressings to pair with her incredible greens, but I will also have some kraut, black bean burgers, and maybe waffles for sale!

Hey Friends!

It's Friday..where has the week gone? And also, wasn't it just March yesterday?😜

We are moved into our new house! But anyone who has moved knows that is just the beginning...settling in and setting up your home bakery/fermentary in the basement is a whole nother ball game.

⏩️So I'm writing this post to say I will be taking another week of baking.
For anyone who doesn't know, I also hold two (soon to be three) positions outside of my home business and those all need some attention after the move as well. As well as the home part of home. And making more kraut and kimchi :)

For the Stephenson County Farmers Market tomorrow: I will have some scones :) and a few other products but for once I should be able to fit everything on one table hah.

For Jo Daviess Local Foods I will have very limited frozen items available.

Something new is coming to the Stephenson County Farmers Market this weekend! (and on www.jdlf.org)

I've been playing with yeast recipes...
Don't get me wrong, fermented sourdough is still my jam, my bread and butter, my main offering.
However....yeast bread has a much quicker turn around time, which my life needs right now! This also gives me the opportunity to experiment more with different breads and products.
Like English Muffins 😍

I do have some sad news.
The kimchi batches are gone. Out. All ate up.
And it's not yet Napa cabbage season...so I'm contemplating if I'm going to find some non-local cabbage to make another batch for you savages :) Let me know what you think.

I'll do a post later with full list of offerings for market tomorrow.

Things are a brewing over here!😉
While these batches of kraut are made with organic cabbage, its not the season for it to be local. Next year I will be more prepared, because ya'll are eating a lot of kraut, and it's glorious!

📣In one of these buckets is a new blend, that does have two local ingredients in it! It's a beautiful color, and will have a name with a reference that may surprise you (coming from me). 😎
Testing pH today to see if they are ready to come to Stephenson County Farmers Market this Saturday, or Jo Daviess Local Foods orders on Tuesday.

Also, two of these ferments are being weighed down by other ferments, which makes me just giddy!

🍓Also added some Strawberry Chocolate Scones (frozen round of 8) to the website!

The cranberry hazelnut vinaigrette is sooo good!
Fermented and local, two of my favorite things.
Ingredients: Cranberry honey, cranberry vinegar, hazelnut oil, stone ground mustard, and s & p.

Also added my Jalapeno Peach vinaigrette back this week made with jalapeno honey, peach vinegar, hazelnut oil, stone ground mustard, and s&p.

Hazelnuts got you down? Don't worry, I'm waiting on a new oil to try out. (Regional and organic!)

Hey friends!
Going on my third year operating as a home bakery business, and I finally have decided to legitimize and go the route of establishing as an LLC!
THANK YOU to everyone who has supported me along this journey, and don't worry-my offerings aren't changing too much.
I chose to use Fermentary over Bakery, because that is the foundation of most everything I do, and where I'm really having fun creating :)

I've always said "You are worthy, simply because you exist"
To build on that truth I'm saying "You are comprised of more bacteria than human cells. We are the microcosm’s revival."

Microcosm: -Greek roots meaning "little universe"
-a community, place, or situation regarded as encapsulating in miniature the characteristic qualities or features of something much larger.
-(also the insane amount of incredible bacteria that comprises our human selves and world)

Revival:- an improvement in the condition or strength of something
-an instance of something becoming popular, active, or important again

We exist, we are worthy, we are a miracle of symbiotic stardust, and it is time for us to feed ourselves fuel that allows us to rise to the joys and challenges of this time in history.
We start with the micro shifts, macro shifts will have no choice but to follow.

Hey friends!
If you haven't noticed, I'm going through a bit of a shift with my offerings. Hoping to figure out a rebrand by the end of the month, but that's neither here nor there.

🍞I'm still baking bread, just not nearly as much, and predominantly selling it through www.jdlf.org (so if you want some, go there)

I'm diversifying my products - krauts, fermented honey, Nutella, vinegar, etc.
I'm kind of a fermention geek.

🫶My number one passion is supporting local producers, and creating awareness and access for everyone to buy local what they can.
I've partnered with some great local companies and farmers to bring local and sustainable products into your kitchen!
You can see them in the photos 😍

I'll be at the Stephenson County Farmers Market tomorrow with a wide range of products! Including some 🍞Sandwich loaves, dinner rolls, scones, naan, 🥕produce (carrots, garlic, beets, squash, & more), aforementioned ferments🤤, and more! It's gonna be beautiful mayhem at my tables 😆

I will also be at the The Farmers Market at The Copper Cow on Sunday, if you can't make it Saturday! 10-1 and you can get great breakfast!🍳🥓
