These three pictures are the times I see Ethel the most. The first is right after I feed her so she’s small and it’s amazing to think that I’ll be able to make 8 loaves of bread from her! The second picture is when I wake up in the morning and check on her. She’s usually doubled already at that point. The third picture is just before I use her to make bread. She is usually bigger than the morning and very bubbly. Sometimes by the time I get home from work she’s already starting to fall. Which means she is past peak. I’m never bothered by this because she is still very active and makes wonderful bread!

Woah Ethel!

This is just discard even! I put this in the fridge to use for cookies later and I didn’t realize she was still busy growing so much! This is a great example of leaving enough space for growth in your jar even if you think your starter is done growing. Thankfully Ethel sneaked out instead of exploding the jar. However when I opened the lid there was definitely a big pressure release. Your starter will shatter the jar if you put the lid on tight so always allow space for your starter to escape!

Take the pepperoni and cheese bread and take it the next step! Sliced (long or short way), with your favorite pizza sauce and topping, baked, and you have absolutely fantastic pizza!

Message me to get yours ordered!

And spy that awesome cutting board from REM Woodworking & Beyond. We use it to cut every loaf of bread in this house.
