🥯 #7 – Waukee’s Transformation
Sometimes the best things happen when the plan changes.
When we first acquired the space in Waukee, it wasn’t even intended to be a retail store.
The original vision was simple: create a space where Sarah and Toney could work on the business and pursue a new passion—baking.
Of course, we couldn’t resist opening a small retail area in the front.
We loved experimenting with croissants, danishes, cookies, and all the delicious creations that come from a bakery kitchen. Looking back, we really had no idea what we were doing, but we were having a lot of fun figuring it out.
The bakery officially opened on Halloween of 2024, and we spent the next year trying to build our identity in the Waukee community.
One of the biggest challenges came from inheriting a space that many people associated with the previous tenant, Echo’s Cookies. We quickly learned that customers had strong feelings about the cinnamon rolls they loved.
To be honest, there were times when the feedback felt overwhelming.
But instead of getting discouraged, we got to work.
That motivation led us to create what has become one of our signature bakery items: our Croissant Cinnamon Roll.
Buttery, gooey, flaky, and completely our own.
As time went on, we realized something important.
While we loved baking pastries, our heart was still in bagels.
So we began bringing more of 5 Borough Bagels into the Waukee bakery. Slowly but surely, the space evolved into something new—a full-fledged bagel shop that still celebrates everything we love about baking.
Today, guests can enjoy our kettle-boiled bagels alongside fresh pastries, croissant cinnamon rolls, danishes, cookies, and signature matcha drinks like Banana Bread Matcha and Blueberry Muffin Matcha.
Looking around today, it’s hard to believe where it started.
What began as a small bakery experiment has become a thriving bagel shop and an important part of the 5 Borough Bagels family.
We’re incredibly proud of what Waukee has become, and none of it would have been possible without our team, our family, and our customers who supported us every step of the way.
