🥯 #8 – The Adventures That Shaped Us

Not every chapter in business is meant to last forever.

But every chapter teaches you something.

Over the last 10 years, we’ve had the opportunity to bring 5 Borough Bagels to some unique places and meet incredible people along the way.

At Mercy Health & Fitness, we expanded beyond bagels and served smoothies, oatmeal bowls, and healthy breakfast options for members before and after their workouts.

At , we served Bagel Dogs—hot dogs wrapped in bagel dough—alongside waffles while surrounded by happy pups and their owners.

Then came Jordan Creek Mall.

Originally, we were supposed to be there for a year, but after six months we learned a new tenant would be taking over the space. While our time there was shorter than expected, we loved every minute of it. We introduced mini bagels, experimented with treats from our newly opened Waukee bakery, and had the opportunity to serve customers from all across Iowa at one of the state’s busiest retail destinations.

While these locations weren’t permanent, they helped shape who we are today.

They taught us to be adaptable, creative, and willing to take chances.

Some chapters last a decade. Some last a year. Some last six months.

But every chapter matters.

❤️ 10 YEARS OF 5 BOROUGH BAGELS ❤️

🥯 #7 – Waukee’s Transformation

Sometimes the best things happen when the plan changes.

When we first acquired the space in Waukee, it wasn’t even intended to be a retail store.

The original vision was simple: create a space where Sarah and Toney could work on the business and pursue a new passion—baking.

Of course, we couldn’t resist opening a small retail area in the front.

We loved experimenting with croissants, danishes, cookies, and all the delicious creations that come from a bakery kitchen. Looking back, we really had no idea what we were doing, but we were having a lot of fun figuring it out.

The bakery officially opened on Halloween of 2024, and we spent the next year trying to build our identity in the Waukee community.

One of the biggest challenges came from inheriting a space that many people associated with the previous tenant, Echo’s Cookies. We quickly learned that customers had strong feelings about the cinnamon rolls they loved.

To be honest, there were times when the feedback felt overwhelming.

But instead of getting discouraged, we got to work.

That motivation led us to create what has become one of our signature bakery items: our Croissant Cinnamon Roll.

Buttery, gooey, flaky, and completely our own.

As time went on, we realized something important.

While we loved baking pastries, our heart was still in bagels.

So we began bringing more of 5 Borough Bagels into the Waukee bakery. Slowly but surely, the space evolved into something new—a full-fledged bagel shop that still celebrates everything we love about baking.

Today, guests can enjoy our kettle-boiled bagels alongside fresh pastries, croissant cinnamon rolls, danishes, cookies, and signature matcha drinks like Banana Bread Matcha and Blueberry Muffin Matcha.

Looking around today, it’s hard to believe where it started.

What began as a small bakery experiment has become a thriving bagel shop and an important part of the 5 Borough Bagels family.

We’re incredibly proud of what Waukee has become, and none of it would have been possible without our team, our family, and our customers who supported us every step of the way.

🥯 #6 – Becoming Part of the Principal Financial Grouprincipal Community

One of the most rewarding chapters in our journey began with a simple invitation.

In 2025, our partners at / invited us to serve at Principal Financial Group’s downtown campus inside Café 750.

At first, we were scheduled to come in just one Wednesday each month.

We weren’t sure what to expect.

What we found was an incredible group of people who welcomed us with open arms. We met employees from all over the organization, built relationships, shared our bagels, and had an absolute blast every time we visited.

The response was overwhelming.

What started as a monthly visit quickly grew into something much bigger.

Beginning in January 2026, we were invited to become a regular part of the Principal campus experience, serving Monday through Thursday from 7:30 a.m. to 1:30 p.m.

It’s been an incredible opportunity for our team, our business, and our growth.

What started as one Wednesday a month has become one of our favorite places to serve.

To the teams at Compass Group, FoodWorks, and Principal Financial Group: thank you for believing in us and welcoming 5 Borough Bagels into your community.

We look forward to many more mornings together.
