This weekend we celebrated the original Bitt(ner)! My sweet mama turned 70. And what better way to celebrate than with her favorite cake: the ORIGINAL Waldorf Astoria Red Velvet cake - the one she used to have when she was younger.

If you’ve been here a while, you know that cakes are not my thing. In fact, I can count on one hand the number of times I’ve made this particle cake. It’s not just the cake that’s a lot of work, but the frosting is a whole different story.

If you’re thinking ‘it’s just cream cheese frosting’, sorry to break it to you, but you’re wrong. I know this because my mom brings it up every time she has red velvet anything. Back in the 1930s the frosting was actually Ermine frosting, which starts with a roux. If you think that sounds weird, it kind of is…but if you get it right, it’s so dang good! The frosting changed to cream cheese in the 1960s because it was easier and faster to make.

You’re welcome for the history lesson.

Anyway - here is the cake. It’s definitely not the prettiest, but it was delicious and (more importantly) it made my mom happy.

Side note: El successfully cracked her first egg making this cake and my little baker heart exploded.
