Trying out Panettone for next holiday season! We're busy with the Farmers Market in the summer, so this is our chance to experiment. Goal is to use local flour, but the US milling process differs from Italy's, not to mention that the grain and their different types of gluten ratios with US grains is different. Anyone had success finding a suitable flour substitute?
