A wonderful friend of mine ordered 175 pies as Thanksgiving gifts for her clients. We decided on a Dutch caramel apple pie : a tart apple filling sprinkled with pecans and topped with a buttery brown sugar and oat topping; covered with house made caramel and coarse sea salt

-925 Granny Smith apples peeled, cored, and chopped
-95 pounds of butter
-82 pounds of brown sugar
-75 pounds of all purpose flour
-33 pounds of granulated sugar
-22 pounds of rolled oats
-11.5 pounds of pecans
-7 pounds of heavy cream

I didn’t really keep track of my hours on this project. I started about a week and a half ago making the bottom crusts and individually quick frozen apple slices. Huge shout out to my awesome family for all of their support, especially my mom who did a ton of apple prep and instilled my love of baking from a young age 🥰
I also want to say how grateful I am for all of you out there … without incredible customers like you guys, I wouldn’t have anything! Happy Thanksgiving to you and yours!
