After 30 years 😩 as a chef and baker, you’d think I’d made everything.
But until December 2025, I had never made a pie.
Not because I couldn’t—simply because the opportunity had never come along.
When it did, it was a sink or swim with a staff member leaving the country. Every batch taught me something new. Every challenge pushed me to improve.
Today, we’re producing hundreds of pies every week.
The lesson? Never stop learning. Never assume your best work is behind you. Sometimes the thing you’ve never done before becomes the thing that changes everything.
From my first pie to hundreds leaving the bakery each week—it’s been an incredible, challenging ride.
