HYLSTEN TURNS 5
On September 2nd, 2020, we pulled our first loaves of bread out of the oven and delivered them to a handful of local shops in a beat-up Nissan Micra.
The five years that have followed have felt nothing short of a miracle. It has been such a privilege to make bread every day and to work with a very special network of local businesses who help us get our bread out into the world.
It was this network and the community that supports it that came to our rescue in December 2021, when a catastrophic fire ripped through the bakery just days before Christmas.
We emailed our customers to say we’d have to close the business, but two incredible women, Elise from and Sima from were having none of it. They instantly replied saying they would create a Go Fund Me page to get us back on our feet.
In just six weeks, they raised £28,000 which enabled us to buy a new oven, repair the smoke damage, and pay our staff during the closure.
It still blows us away that we wouldn’t be here without the beautiful generosity of so many. Nor would we still be going without the continued support of everyone who buys our bread, week in and week out.
We want to thank you for quietly acknowledging that our bread is a product of a natural system — the flour we use varies from season to season, from farm to farm, and our bread varies with it.
We’ve never had anyone complain about the sizes or shape of our loaves — even when we’ve winced at the idea of sending them out (and yes, we know we’ve sent some pancakes into the world at times — it’s always a bit heartbreaking). Thank you, from the bottom of our hearts, for buying our bread on those days. It feels like a small, radical act of love from each one of you.
We hope you know that this steadfast support not only enables us to keep baking for you — it also supports a much wider network of millers and farmers who are working tirelessly to build a resilient UK grain economy.
