It's warm outside , the fridge has packed in and i'm going to have to bake all the bloody bread off in an even warmer bakery before the sun goes down. Still there's sun, real honest to goodness sun and heat, real heat. Take it all in people!!

We are chopping and changing the run this week so tomorrow it's Enniskillen, Lisnaskea, Lisnarick, Maguiresbridge, Clogher, Fivemiletown. Bear with us, just taking an extra day off in this game can have a ripple effect across the board.

I do hope you're enjoying your weekend so far. We are off on Monday next week and in production only all day Tuesday. This means the next retail bake will be Wednesday morning. Our chef pals are unaffected so good toast is on the menu across the land. At home I will be grilling slices of my bread on the BBQ and scraping them with garlic cloves before loading them up with marinated tomatoes and some wild garlic pesto I bartered Dougal for last week. Dessert will be this savage brew "the cure" from my man Norman at Fermanagh Beer Company. We have a special collaboration in the testing phase and I'm really excited to explain it soon. See you soon. 💚

There's some really great bread coming out of the bakery this week. The fermentation, the bulking, the stretching, the shaping, that final oven loaded finesse. A burst of energy and flavour. These are fine times for real bread and we are a privileged crew among the few. Grab one from a retailer or go and eat some at one of our restaurant, cafe , food truck or hotel.

I am really gonna miss this work-space when the time comes. I signed the lease today on what can only be described as a continent compared to this little hamlet. You probably know this but I have been searching for years to find a bigger space. A warehouse we can set about building a sourdough bread factory that will see our bread into more homes. It was important for me to stay on the island of Enniskillen and I will be sharing more about it very soon. For now it's an early bake shift for me tomorrow so night night. We are back in Omagh, Fintona, Irvinestown, Dromore, Tempo as well as Enniskillen.
