If you’ve picked up from the bakery this week you might have noticed some changes in the garden as plan B for upgrading the bakery leaps into action. Well, leaps isn’t quite the right word, as demolishing the shed in the heat on Monday proceeded at a slightly more sedate pace than that word suggests. More changes on the way as the summer progresses… including getting the old shed panels to the tip 😂

Phew, that was a warm dough day! Fortunately it’s all safely in the fridge ready to bake for you all at Ely Markets Farm...

Phew, that was a warm dough day! Fortunately it’s all safely in the fridge ready to bake for you all at Ely Markets Farmer’s Market in the morning.

Specials are Parmys and Seedy Bastards, plus Masala Buns, Hazelnut Butter Tarts and an Apple Butter Ginger Bakewell Tart, plus all the regulars. Apologies to the customer who I assured I’d have Village loaves, a pesky appointment in the middle of my dough day meant I had to streamline production slightly, but they’ll be at both markets in June, I’ve got 6.5kg of olives to get through!

Love this time of the year, the garden’s bursting with life and produce for my loaves – the rosemary bush in the foreground is currently lending me its leaves for the Parmy, and the rhubarb is near ready to give me a batch or two of the rhubarb ciabattas. The night time temperatures are making starter maintenance just that little bit easier, and the daytime temperatures aren’t yet hot enough to make dough days painful.

With the bakery across the road no longer happening big changes to the garden are on the horizon, but for now I’m just enjoying its current phase and dreaming of what comes next.

It’s Parmy month at the moment, so I’ll be bringing a batch of these loaves to the Ely Markets Farmer’s Market tomorrow....

Cracking batch of loaves out of the oven today. I was almost caught out by the warm afternoon yesterday, but fortunately the dough was strong enough I take a little extra ‘poof’.

Next week is a new month in the bakery so it’s time for a new special – the Parmy. Parmesan, smoked garlic and rosemary, on the website now. Enjoy!

Not sure why I always listen to Country while I’m shaping the final loaves of the day. Tonight these Dons are being serenaded by Lucinda Williams before they go into the fridge for their overnight cold re**rd. Pumpernickel’s Cousins on their way to Wilburton Community Hub for the first time. Possibly the healthiest bread I bake with its 50% stoneground wholemeal flour, plus added seeds and whole grains.

There’s something special coming to Farmer’s Market tomorrow. A batch of Walnut heritage loaves using walnuts from an Ely garden provided by a kind customer who had a bumper crop last year.

The nut/flour combination is a match made in heaven with the walnuts complimenting the naturally nutty flavours of the population wheat perfectly.

There’ll also be Charles and Sage, Zesty loaves, Hazelnuut Butter Tarts, Treacle Tarts (new!), Sesame Ginger Buns and all the usuals.
