Barley sourdough focaccia
We made this focaccia with 60% whole barley, 20% whole wheat and 20% white flour all local and organic. 75% hydration. 1.8% salt.
Inclusions (top of the flat dough): whole garlic cloves, dried tomatoes, basil and rosemary all homegrown, olive oil, olives.

Olive spelt sourdough
This bread was made with 50% whole spelt and 50% local organic wheat flours. Inclusions: unsalted olives, olive oil, herbes de provence, roasted hazelnuts, and sine sesame seeds. So yumy!

Olive herbes de provence sourdough bread:
Herbes de provence is a collection of herbs that originated from the Provence region of France. It usually includes marjoram, savoury, oregano, thyme and rosemary. In Noryh America people add lavender leaves or flowers. It is a very aromatic collection of herbs that has many medicinal benefits and is ideal to add flavor and aroma to many dishes such as pizzas, meat, and vegetables.
Today I used a reduced version of herbes de provence from my garden (oregano, thyme and rosemary and lavender) to add an aromatic flavor to this olive sourdough bread.
Ingredients: 50% spelt, 50% local organic white flour. Inclusions: Olives, olive oil, roasted hazelnuts, sesame seeds and herbes de provence.

Barley sourdough with ancient amber wheat flour:
I'm fortunate that I got whole barley and ancient amber wheat flours from a local organic farmer. I used barley, white, and whole ancient amber wheat flours to make this sourdough bread.
Inclusions fennel, anise and back seeds.
I'm very surprised and happy with the result given the low gluten content and "glue-like" nature of barley dough. The loaf is so light and tasty!
