Raspberry Mustard Vinaigrette

Ingredients: 2 tablespoons raspberry mustard, 1/4 cup olive oil, 2 tablespoons apple cider vinegar or red wine vinegar, 1 tablespoon honey (adjust to taste), 1 teaspoon Dijon mustard (optional, for extra tanginess), Salt and pepper to taste

Instructions: In a small bowl or jar, whisk together the raspberry mustard, vinegar, honey, and Dijon mustard (if using). Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined and emulsified. Season with salt and pepper to taste. Taste and adjust the sweetness or tanginess as needed.
Serve immediately or store in the refrigerator for up to a week.

This vinaigrette is great for drizzling over mixed greens, spinach salads, or even grain salads.
