EP3… Biscuit week may not have gone perfectly but I’m still so proud of what I was able to produce.

My dumbbell standing biscuits were a representation of my love for the gym ever since I was 14. With a deliciously zingy limocello flavour, they definitely tasted better than they looked!

When we were asked to build a biscuit boat my mind immediately went to vikings! I wanted the flavours to match with traditional Scandinavian flavours of orange, cardamom and poppy seeds, it was a bit rough around the edges but was still able to sail the seven seas 🌊

I really wanted to go all out for bread week and wanted to make sure I packed as much flavour in each bake as possible!

My baguette was filled with Calabrian chilli, caramelised red onion and pecorino romano cheese, inspired by traditional Calabrian flavours where my Nonno was born and raised.

I found getting the stencilling perfect on the technical bake was by far the hardest challenge for me. It didn’t turn out exactly how I wanted but fifth place was still a great achievement.

The showstopper was where I gave it everything I had! Doing three different flavoured and coloured breads, braided between each other was always going to be a huge task to pull off but I’m so happy that it came out exactly as I had planned! The flavours all worked together perfectly and the braiding was tight and precise. Not as much of a story behind this one, just a cool design for a sea creature that I’ve always admired 🐙

Italian chilli, caramelised red onion + provolone, baked into focaccia. Sweet, spicy, cheesy and very hard to stop tearing pieces off.

Ep ONE of The Great Australian Bake Off is out!

Well that wasn’t a piece of cake! But I live to bake another day! Forever grateful to everyone who tuned in and showed their support, you have all made this experience even more special!

I wanted my showstopper to represent my love for Elvis and the connection that my mum and I have through music. Whether it was listening to her favourite songs everyday or getting to visit Graceland myself (such a special memory), I’ll always be a fan of the King!
