I love baking delicious cakes (naturally!) and this one is really lovely with a cup of tea or coffee. Toasted pecans in the cake, and a frosting with “burnt” honey to deepen and intensify the flavours.

Winter in the Blue Mountains seems to bring a season of birthday celebrations and Yule gatherings. This weekend, a round version of my vegan Chai Cake helped add a little sweetness to a Yule celebration, while a group visiting from Sydney marked a significant birthday with three cakes to share: Hummingbird Cake, Date & Almond Cake, and Orange Polenta Cake (gluten and dairy free).
It’s always a pleasure to be a small part of these special occasions 😊

This was a big one! I was asked to create morning tea treats for 80 conference attendees here in the Blue Mountains, with the bakes inspired by flavours connected to the client's products.

✨Blackcurrant Louise cake
✨Dark Chocolate Peppermint Brownies
✨Brown Butter Blondies with Macadamia and White Chocolate

It's always interesting working from a flavour brief and translating that into baked goods that people will hopefully enjoy. I was pleased with how these came together and grateful for the opportunity to contribute to the event. It certainly honed my skills in catering for a crowd!

And most importantly the feedback from the organisers was wonderful:
“They were a hit! Thank you so much for your help in incorporating the flavours, it really brought our themes to life on the day.”

A recent custom cake featuring Desert Lime and Finger Lime flavours that bring a gentle, fresh tang to both the cake and buttercream.

“It was perfect for us thanks Kathy. I wanted something quite subtle after a big dinner so it hit the spot. The leftovers made the trip back home and my hubby is still enjoying it. Many thanks for your professionalism.”

It’s always good to hear that a cake has been enjoyed long after the celebration is over.
