E.S.P - Exceptional sherried perfection & it’s an outstanding single cask that was hand selected by Dan for its brilliance. It has spent its whole life aging in a single Pedro Ximinez sherry cask and was the pick of half a dozen casks of the same type and age. It’s the only one to be bottled as a single cask without a second maturation or finishing due to its exceptional quality. Loaded with sweet caramels and dark berry fruits as you’d expect but also giving a beautiful saw dust like oakiness without being too cask dominating. Superb balance leaving you wanting more after every sip. Bottled at a cask strength of 55% and yielding 130 bottles, it won’t last long….

Ode to Islay
Production notes
An ode to Islay is aptly named for the love affair Dan has had for over 20 years. Since before his first visit to the ‘promised land’ Dans had a healthy obsession with Islay and all its whisky but mostly with Laphroaig. Giving huge thanks and respect to John Campbell for his friendship and guidance over the years this batch sees a peated Highwayman spirit aged in a first fill Laphroaig quarter cask to give the best of both worlds in perfect balance. Laphroaig and Highwayman, a perfect marriage of everything the world needs right now….
As always unfiltered and undiluted producing 140 bottles at a cask strength of 55%. Byron Bay and Islay perfection!

Nose-
Soft chewy salted caramels wrapped in butter menthol with hints of sea rich minerals and wafts of beachside bonfires….

Palate-
Very gentle toffee sweetness upfront developing into a salty sea spray with hints of crushed oyster shells and soft vanillas. Flashes of pink grapefruit zest finishing with a very light gentle and integrated smoke.

Finish-
Long oily and salty finish
